A Warm Welcome at Nicole’s Table
As soon as I arrived at the top of Orchid Hill Drive, I was greeted by Nicole, our host for the day. Her warm smile and friendly demeanor instantly made me feel at home. The class was held in her beautifully decorated house, which had a large table that could comfortably seat about eight people. Despite the lack of air conditioning, the continuous Caribbean breeze kept us cool and comfortable.
Nicole’s home was perched on a hill, offering a breathtaking view of the river and the land below. It was the kind of serene and picturesque setting that made me think of the life my partner and I enjoy here in the Caribbean. I chose to sit outside on the patio, where the view was even more spectacular. It was a peaceful spot, perfect for soaking in the beauty of the island.
Cooking with Rum: A Caribbean Experience
The cooking class was an intimate affair, more like being taught in a friend’s home than a formal class. Nicole, originally from Montserrat, shared her knowledge of Caribbean cuisine and the rich history of rum with us. Her husband, Adam, an American, joined us as well, adding to the friendly and welcoming atmosphere.
We learned about the various uses of rum in cooking, from starters to desserts, and even got to participate in a rum tasting of six regional rums. Nicole’s informal teaching style made the experience enjoyable and engaging. She even shared a fun tidbit about the local pronunciation of Antigua, which is “An-Ti-Ga,” not “An-Ti-Guay” as many outsiders say.
A Feast with a View
After the class, we gathered outside to enjoy the delicious three-course meal we had prepared. The food was fantastic, and the view from the patio made the experience even more memorable. It was a lovely day spent learning, cooking, and enjoying the company of new friends.
As I savored the flavors of the Caribbean, I couldn’t help but feel grateful for the opportunity to experience such a unique and authentic slice of island life. Nicole’s Table was more than just a cooking class; it was a celebration of Caribbean culture and hospitality. I left with a full belly, new friends, and a deeper appreciation for the rich history and flavors of the Caribbean.
