  • Orchid Hill Drive - Jerk cooking is an authentic Jamaican way to cook meat. Whether it is pork, chicken, beef or fish, the meat is seasoned and slowly cooked over an open fire or on a barbecue grill. The seasoning is made up of local/regional spices like scallions, onion, thyme, pimento (all spice), cinnamon, nutmeg, peppers and salt. The first taste of jerked food is hot with pepper, and as you eat the flavors of all the other spices mingle in your mouth giving an explosion of stunning flavor. It is for this reason why all the other islands have adopted Jerk.

Jerk is now viewed as a regional food, and everyone has their own special recipe to make jerk seasoning. In Nicole’s class, Nicole will introduce you to all the jerk spices, provide a history about jerk, and discuss the various ways jerk seasoning can be used to give your food its own West Indian style when you return home.

Once lunch is ready, guests will enjoy eating on our large veranda overlooking the Caribbean Sea (and the hummingbirds that frequent our orchids).

  • Coconut Crisps and/or Green Plantain Chips with Pineapple Salsa - This starter is served in all four classes and is sometimes replaced with Cassava Chips.
  • Jerk Chicken (or Tofu for vegetarians) with Grilled Pineapple - Dish is also served with Jerk Sweet Plantain Tostones, Red Beans and Rice in Coconut Milk, and a Garden Salad
  • Coconut Custard Tarts - Rich, tasty, and one of our most popular desserts. It is served with our Coordinating Curry, Jerk and Seafood classes.
Additional Information

Jerk cooking embodies the true essence of Jamaican culinary arts. It pairs well with a wide array of proteins such as pork, chicken, beef, or fish, each one carefully seasoned and gently cooked over a blazing open flame or a searing barbecue grill.

The term ‘Jerk’ encompasses various regional spices like scallions, thyme, all-spice or pimento, and cinnamon. The initial taste of jerk cuisine is a fiery punch of pepper, but, as you dig in, the other spices come to life, creating an explosion of spectacular flavors. Given its unique taste, it’s no surprise that other islands have adapted the jerk seasoning to their cuisine.

Currently, Jerk is perceived as a regional speciality, with everyone boasting their own unique formula for jerk seasoning.

Nicole will guide you through the myriad of jerk spices and their history and elaborate on the diverse ways jerk seasoning can be incorporated to instill a taste of West Indian cuisine into your dishes back home.

This course goes beyond discovering new taste profiles. It entails having fun cooking with newfound friends within the comforts of a West Indian dwelling, with a spectacular view of the Caribbean Sea that serves as the backdrop!

  • A minimum of 2 people required to hold a class. If only 1 individual, join an existing class.
  • We require multiple hand washings and masks to be warn if a guest has flu-like symptoms.

We are unable to offer transportation to our home, but we do provide customized directions and information for all of our guests. When you arrive at our home, we always meet you and talk with the taxi driver to make sure he or she will pick you up on time when we are finished. We work with cruisers, hotel guests, and BnB guests all the time so we can help you find our way to our home via taxi or a car rental.

A MUST DO if visiting Antigua. Great food and company! - The jerk cooking class was one of our favorite experiences while visiting the island. Nicole set the whole tone of the class with her welcoming and laid back vibes. She led us through every aspect of cooking all the various local dishes from start to finish. We had a lot of good food while visiting Antigua, but me & my husband both agreed this was the best meal we had while there. Also, Nicole and her family are so genuine and spunky. They made you feel like you were at your home away from home. If you love meeting new people and enjoy a hands on culinary experience in a home-y setting with gorgeous views of the Caribbean, you don’t want to miss this.

Fun afternoon in Antigua! - Really fun time cooking with Nicole and Adam at their beautiful home with amazing views. We’re now semi-pros in cooking jerk chicken and coconut tarts, among a few other recipes. Good company, good times, highly recommended!

Experience island food - This was our first island cooking experience and we will do it again. A great way to learn about local foods with others who also enjoy food preparation, or just want to learn. Enough hands on that everyone had things to do and the hours flew by. Nicole was a lovely host and with Iana’s help in the kitchen all went smoothly. Next time…cooking with rum!

Great food and friendly atmosphere - We attended the All About Jerk cookery class in February 2024 and thoroughly enjoyed it. We felt very welcomed into Nicole's lovely home with gorgeous views. We enjoyed meeting other holidaymakers during the class and the size of group was just right, ensuring everyone could feel involved. The food itself was delicious and we're looking forward to trying out the recipes at home! Would definitely recommend this experience - thanks again Nicole!

An incredible cooking and cultural experience! - My wife and I always look for unique activities when we travel and this topped the list. We had an awesome time making delicious food and also enjoyed getting to know Nicole and her husband. We chatted about the country, their family and just about anything we else! We are not great cooks but Nicole made of very easy and enjoyable!

Awesome culinary experience - A truly awesome experience learning to cook one of our favorite foods. Nicole was awesome insightful and explained everything. The venue is spectacular and on our return want to try cooking with rum. A visit to Nicole’s Table will not disappoint.

Fun, educational, and tasty! - We had such a great time at the cooking classes through Nicole's Table! Unfortunately none of the excursions offered by the cruiseline we were traveling on were too compelling, so we branched out and found Nicole's Table on Viator and are so glad we did. We got to meet people from different ships and tourists traveling independently and worked together to prepare a fantastic meal. The food blew us away and was our favorite meal from the entire trip. Nicole and her family are charming, engaging, and will keep you laughing and smiling the whole time. If you have the opportunity to take this class, we absolutely recommend it!

The Experience, The Food, Simply Marvelous - First, let me start off with, I highly recommend Nicole’s Table excursion. We were staying at a nearby resort and my husband and I were able to set up an excursion. She offered many different cooking classes, they were so high in demand during our stay in Antigua; however, we were able to snag a spot at the All about Jerk class. We caught a taxi and arrived right before our scheduled time. We were welcomed into Nicole & Adam’s lovely home. A highlight of this excursion was the peaceful, family friendly atmosphere. Beautiful views everywhere you looked from the property. We met other couples from all over the world. That was another highlight of the excursion, talking to and getting to know everyone. Once the excursion began, we all were able to get involved, whether cutting up vegetables, fruit, blending ingredients, mixing, frying, baking, etc., we did it all. By the end of all of the cooking, we were so proud of our hard work in the kitchen. Another highlight, the food was delicious. Let me end with this, I highly recommend, if you are on the fence, I would say do it. This was hands down the best excursion on the island of Antigua.
