Delicious and entertaining cookery experience. - What a great experience. Chef Frederic was fantastic! Very knowledgeable and skilled, with plenty of top culinary tips. What really made the day was his mischievous sense of humour and entertaining anecdotes. The food was delicious and accompanied by plenty of wine. What’s not to love!

Fun class, Frédéric led the way with wit and charm to make you a better and smarter cook - My wife and I were in Paris, and often take cooking classes while traveling. So we signed up for this one. It was a great experience led by Frédéric, the charismatic, opinionated, delightful, very French instructor. Frédéric has worked in kitchens and has studied culinary history, so he is extremely knowledgeable about how to cook, why things are cooked in certain ways, and some of the history and science leading to dishes or preparation techniques. For example, if the flavor in a particular food is water soluble, then rinsing it before preparing it removes some flavor. And different types of mushrooms can be cleaned in different ways, depending on the structure of the fruiting body. This impacted the preparation of vegetables in the dishes that we made. Frédéric taught us the "what" and the "why" with witty charm. We made a mushroom starter, salmon and ratatouille as the main, and a tart tatine for dessert. All of the dishes were very good, very French, and helpful to learn techniques in the kitchen that can be expanded beyond the recipes made in the class. The entire group of 10 people got along well and had a good time together, especially going to the market. Touring the market in an accessible way with a knowledgeable resource with you is valuable and fun. I only wish we'd done it earlier in the trip so that we could go back to the same market later - the market was closed until the day after we left Paris.

Even experienced cooks will learn a lot! - We were eight people in total, learning from a wonderful chef, Luc. We met at the location (which was conveniently quite close to our hotel) and then went to the market to get ingredients for our meal. (I also scored a scarf at the market during a 10 minute break!) Luc was extremely organized, divided us into different combinations and assigned tasks. We learned how to make a wine reduction sauce and now I understand why French sauces are so delicious. He reduced an entire bottle of Cab Sauv down to 2 tablespoons! Talk about concentrated flavor. My husband and I cook quite a bit, and we have even prepared and "sold" tasting menus paired with wines to raise money for various charities. We still learned a great deal from participating in this class, and we had a great time. In fact, I would say we learned more techniques from this class than any other we have taken. Our menu consisted of cauliflower soup, coq au vin and a tarte tatin (apple). Highly recommend this experience.

A delightful and memorable cooking experience! - We had a fantastic time at this Morning Market French cooking class earlier this week. The experience began with a trip to the local market, followed by a hands-on session in the kitchen where we prepared a full three-course lunch. The group was small and intimate, which made for great conversation and a relaxed, welcoming atmosphere. Our chef was knowledgeable, engaging, and made the whole process both educational and fun. With wine, cheese, and plenty of laughs along the way, it was truly a highlight of our trip. Highly recommended for anyone looking to experience French cuisine in an authentic and enjoyable way!

Fine dinning with Pablo. - Review of fine dinning and the importance of good ingredients and cooking technique.. the trip to an open air market was fascinating. A very good overview of the types French cheese and how they are created and how to identify quality labels. Plating and serving were also demonstrated. Dinner was delicious, specific and general questions addressed. A lovely six hours that went too quickly. Highly recommended.

Wonderful French cooking experience! - Chef Paul was wonderful! We started the morning with coffee and croissants, walked to the market while Paul showed us where Ernest Hemingway once lived, returned and started preparing an amazing meal, ratatouille, salmon and vegetable with wine, and apple pie. And you received the recipes that you prepared, a wonderful French cooking experience, I highly recommend! Tres Bien!
