Shida, Marissa and William live in a simple, modest home in a small village in Moshi. In your one hour hands-on cooking class, help Shida to prepare fresh coconut milk using a traditional tool called ‘buzi’, it is a small wooden seat with a sharp grinder at the end that is used to shave the coconut meat. The coconut milk is used to prepare the vegetables and stew dishes. Then learn to make ugali, a traditional corn meal dish that is served with sauteed vegetables. Shida loves cooking this for her family. Making Ugali is an art, and is simple but labor intensive, a real treat to learn!

You’ll be hosted by Marissa, her husband, William, and mum-in-law, Shida, in their unpretentious, humble abode. Don’t miss out on their meat stew before leaving, and soak up the local culture and cuisine in this inviting family’s earthen home.

Start off by assisting Shida to grate coconuts with a traditional implement known as a buzi. Next, grasp the technique of making Ugali, a classic food made from cornmeal. The creation of Ugali, although straightforward, requires considerable effort and is a rewarding and enjoyable culinary journey! Relish your meal seated alfresco on benches with the entire family, eating the Ugali together. Everyone grabs a piece, rolls it into a sphere, and uses it to gather up vegetables or stew. Some other meals you could try include uji (a peanut-and-millet porridge), a beef and green banana stew, and rice teamed with seasoned beans. Dishes are often cooked using coconut milk and slowly simmered over a wood fire for a unique and tantalizing taste. Round off your visit by sampling peanut brittle and Shida’s local brew in the company of friends and loved ones.
