The Ummera smokehouse specializes in smoking organically cultivated salmon caught off the Irish west coast, adhering to the most stringent standards. You’ll learn how Anthony adheres to the wet curing technique to process his salmon, a practice his father initiated back in the 1970s! Understand why oak sawdust imparts a subtle and delightful taste to their smoked salmon. Following this, if the weather allows, you’ll relish an assortment of their smoked products, including their three-star gold award-winning smoked duck, on an outdoor farmhouse table. Your visit to the smokehouse will wrap up in about 45 minutes, after which you’ll get the chance to savor smoked salmon and other meats at Ummera.

You will also have the experience of pairing your tasting with three distinct ciders produced by Anthony’s brother-in-law at Stonewell Cider. These include a dry effervescent cider to a sweet variant.
