The query of ‘What’s fresh and available?’ is a staple each morning before a seafood cooking session. The day’s offerings hinge on the recent hauls, influenced by the current season and oceanic conditions. The catch of the day could be anything from mahi-mahi to snapper, tuna, or grouper, culminating in a scrumptious lunch featuring a locally-sourced fish.

Expect a dynamic menu that may deviate from the initial plan, depending on the day’s freshest catch straight from the fishing vessels. Yet, anticipate an enjoyable time as the meal you’ll savor is spontaneously crafted and cooked.

The aim of this course, as with all others you’ll attend, is to empower you with the skills to easily replicate the dishes once you’re back in your own kitchen. All this takes place in a residence perched atop a hill, offering a panoramic view of the Caribbean Sea and a chance to immerse yourself in Caribbean lifestyle.

“What did the fisherman bring?” is always the question the morning of a seafood class,
This means that the menu is determined by what’s available from the local fishermen.
Whether it is Mahi Mahi, snapper, tuna or grouper, a delicious lunch using a local fish will be the end result.

In From the Sea, Nicole introduces you to a variety of ways in which seafood is prepared in the islands.
You can have a stuffed whole fish, filet, or even Peleau (a dish that has as many personalities as islands in the Caribbean).

Be prepared for a menu that adjusts from the one listed based on what’s fresh and off the boats.
But also be prepared to have fun as we adapt, create, and enjoy what we prepare and eat!

Take this class not just to explore new flavours, but to enjoy the experience of learning new recipes with new friends in a West Indian home with great view of the Caribbean Sea!

  • Children must be accompanied by an adult
  • Minimum drinking age is 18 years

  • All recipes, especially seafood, depend on the season and availability
  • A minimum of 2 people required to hold a class. If only 1 individual, join an existing class.
  • We require multiple hand washings and masks to be warn if a guest has flu-like symptoms.

We are unable to offer transportation to our home, but we do provide customized directions and information for all of our guests. When you arrive at our home, we always meet you and talk with the taxi driver to make sure he or she will pick you up on time when we are finished. We work with cruisers, hotel guests, and BnB guests all the time so we can help you find our way to our home via taxi or a car rental.

Food and Fun All in One - did the light for ambience, a beautiful, beautiful, setting, and a host that is both exhilarating, unique, funny, committed, and a pretty good cook. Had a wonderful day wonderful experience highly recommend this to anyone that looks for something a little off the beaten path that they could enjoy, and make a lasting memory and meet people.

Great Experience - We have taken many cooking classes, and Nicole’s table ranks among the best. She made us feel welcomed immediately and as we began prepping, her knowledge became apparent. Aside from her culinary insights, her stories of Antigua, and the Caribbean were fabulous. And, of course, her home has spectacular views. Do not hesitate…don’t miss this wonderful experience!

Yummy cooking event - Our family scheduled a cooking class with Nicole’s Table during our recent trip to Antigua. Nicole and her family are warm and welcoming. We had the privilege of Nicole’s daughter, Emily, helping the day we participated and she was lovely to our ten year old daughter. The group was a little larger than we anticipated and it felt like an extended family reunion. Nicole orchestrated the food production and gave us all assignments. The food was the best we had during our week long stay. Nicole’s home is situated where you get a beautiful panoramic view of the island and can see where the cruise ships dock. We encourage others to schedule a cooking event. Since we have returned home, we have tried a few of the recipes with success!

A beautiful day! - Lovely Nicole opened her beautiful home to us! She guided us through cooking some fantastic Caribbean recipes and at the end of our kitchen experience we sat as a group along with Nicole at her table and enjoyed the seafood dishes, sides and desserts along with wonderful conversation everyone. It was a beautiful and memorable day!

Amazing! - This was one of our honeymoon highlights!! The beautiful location, the warmth and humour of Nicole and her husband and of course the delicious food and drinks! ( Plenty of it! ) This was such a great way to meet other people and Nicole just made us feel extremely comfortable throughout the class My favourite part was that not only did we we get so many cooking tips but we also learnt so much more about Antigua and the the locals ! It was worth every penny!

Never left hungry !! LOL or in need of a good old Rum Punch!! - From the moment we walked in the door the view takes your breath away !! Picture after picture and the gardens the home everything is amazing so good we booked this cooking experience !! Nicole and Adam were wonderful hosts!

Something different and divine to do on Antigua! - This is a truly unique experience where you are invited to someone's home to learn how to cook dishes, interact with someone who lives there, meet new travelers and enjoy a stunning view. So laid back, informative and fun!! A definite must do here on Antigua. Nicole is fantastic and the chance to meet, talk and get to know new people while cooking a mouth watering feast is truly unique!

Highly recommend - Not only was the food incredible- you dine with a spectacular view. Nicole and Iana have refined the classes to where they are fun AND delicious! We took the From the Sea menu and delighted our palates with shrimp, salmon and mahi-mahi. Banana fritters are to die for! Nicole clearly enjoys what she does and it shows. Highly recommend.

Great way to meet new friends. - We got to our cooking class just a little early and were introduced to the other four ‘students’. Nicole welcomed us with a drink (passion fruit juice or water) and we went out onto this beautiful patio and introduced ourselves. The general topic for the class was ‘From the Sea’ and we worked as sous chefs at this long table to help make a large variety of things - with a lot of tasting & drinking along the way. We started with ‘working’ on the tarts to be used as desert and went on chopping and mixing many things. It all led to our family style lunch with the two main entrees: blackened mahi mahi and salmon along with spicy shrimp, red beans & rice, tostones (fried plantain) and coconut tarts. We sat down to eat about 2:00 pm, toasting with a bottle of prosecco that we brought with us to help celebrate our anniversary. Overall, it was a very rewarding experience.

A wonderful food sensory experience! - My wife and I were on a cruise and decided to take a cooking course at Nicole’s Table. While we had a little bit of a problem getting a taxi from the cruise port, the effort was well worth it. We were greeted by Nicole, who offered a refreshing drink while we waited for the others to arrive. Once everyone arrived we started with making pastry for the tarts, then move on to chopping ingredients for the sauces, and the fish taco slaw. We were treated to wonderful and addictive plantain and cassava chips. Finally spicy buffalo shrimp finished off the menu. We all sat down and had a spectacular lunch of all that we prepared paired with rum punch. The taxi driver arrived to pick us up at the pre-arranged time to take us back to the cruise ship. Since we returned home, we’ve already replicated the fish taco recipe and will enjoy other recipes over the years. We appreciated the fact that the recipes used ingredients that are easily available back home.
