Highlights
  • Orchid Hill Drive - Join Nicole on this hands-on cooking class and explore all the many faces of curry while she creates a meal that fuses a little of the old styles with some newer western flavors. Nicole will teach you how to make curry chicken (and tofu for vegetarians), make the unleavened flatbread known as roti, and all the sides and dessert. Then enjoy a three-course lunch that includes all the recipes for the class.

Once lunch is ready, you will enjoy the three-course festival of flavour sitting on a veranda with a beautiful view of the Caribbean Sea.

Nicole teaches her classes in a very informal way explaining the history of the food and telling stories about living in the West Indies. It is believed that curry came to the Caribbean with Indian indentured servants after slavery was abolished. The influence of curry on Caribbean cuisine is huge. Each island has their own special blend of spices to make up a wonderful pot of stew. Many debates have been held in kitchens as to which island has the best curry… But everyone agrees that curry and roti is one of those comfort foods that people crave after being off the island for a while.

Additional Information

Following the abolition of slavery, curry was introduced to the Caribbean islands by indentured workers. The impact of curry on the culinary traditions of the Caribbean is significant, with each island boasting its own distinct curry blend. Which Island’s curry reigns supreme has long been a point of contention among culinary circles. Regardless of the dispute, it’s universally agreed that the combination of curry and roti is a beloved comfort food for those missing their island home.

In her culinary journey, Nicole delves into the diverse world of curry, crafting a meal that blends traditional methods with contemporary Western tastes. Attendees will gain insight into the history of curry, its health benefits, and shortcuts for whipping up various curry-centered dishes. The ultimate aim is to equip guests with the skills and knowledge to recreate these dishes at their convenience.

Participating in this class is more than a culinary exploration—it’s a chance to enjoy the process of cooking alongside new acquaintances in a West Indian home, offering stunning views of the Caribbean Sea.

AMAZING! 😍🙌🏽 - My husband and I traveled to Antigua for our honeymoon, and he booked Nicole’s Table as one of my surprises! The whole experience was terrific. Nicole taught us how to make curry chicken, roti skin & rum cake. Everything was hands-on easy to follow. Not only was the food delicious but the ambiance and aesthetic of the home added to the experience. Along with great conversation and laughs accompanied by her husband, Adam, and her assistant. Thank you, Nicole’s Table, for providing my husband and me with a once-in-a-lifetime experience & a core memory we will cherish in our marriage forever.

Cooking up something different... - We had wanted to discover a little bit about Carribean cooking while on a cruise (ship) in the region and booked 'Coordinating Curry'.... it was a good choice. The workshop was hands-on :-) Nicole talked about cooking in the region and explained ingredients that we had not seen before. The finale was for everyone to sit around large table on the terrace, chatting and enjoying the food that we had helped to prepare. A wonderful experience and no-doubt that we'll try to recreate the recipes at home :-) Highly recommended.... we would do again.

Fantastic day out in Antigua! - We visited Nicole's Table during a family holiday to Antigua in January 2023, and we could not recommend the cooking class more! Nicole and Adam's house is truly beautiful, up on a hill overlooking the Caribbean Sea, an amazing setting for the half day workshop. Every aspect of the meal is made from scratch, even the coconut milk used to make the various curries. Nicole is an excellent chef and great teacher, and we'll definitely be recreating the recipes now we're back home. We were a mix of vegetarians and meat-eaters, and this was taken into account when designing the meals. Thank you for an amazing day - a must do when visiting Antigua.
