We’ll begin by learning about preparation methods for various proteins (brining, dry rub, marinating) to ensure juicy, flavorful results. Then we’ll prepare sauces with your proteins to further enhance their flavor. And to close out the evening, we’ll make the entire meal on the grill for you to enjoy!
The class focuses on the science and the “why” behind grilling techniques. You’ll learn my “Golden Eight” rules for perfectly grilled proteins, and tips for searing and smoking like a pro!
While the weather in Portland can be unpredictable, our grilling patio is completely covered and we have outdoor heaters if the grill isn’t keeping us warm enough! We will hold the class regardless of weather.

- Lollipop Lamb Chops - Grilled Lamb Chops, basted with garlic butter sauce and paired with balsamic glaze.
- Argentinian Steak w/ Chimichurri - Perfectly grilled steak with smoky accents and robust chimichurri that pairs beautifully.
- Brined Grilled Chicken - Overnight brined chicken breast that is incredibly moist, paired with a sauce such as Thai Satay, Peruvian Aji Verde etc.
- Cedar Plank Grilled Salmon - Perfectly cooked PNW salmon, seared on a cedar plank with a housemade dry rub that is always a crowd favorite.
- BBQ Shrimp - Showcasing my Southern roots with my own BBQ sauce, a perfect blend of smoky and sweet, with a little heat!

Being a native of the Southern United States, I skillfully blend my culinary heritage with diverse and multicultural taste palettes. This culminates in a groundbreaking approach to grilling that seamlessly fuses traditional Southern recipes and techniques with exotic, foreign flavors, all backed by science.
