Subsequently, enjoy a sample of this delectable cheese paired with honey and regional wine. The tour at the ham factory begins with a concise historical overview of the production before you explore the ‘cold stage,’ where fresh meats undergo processing. Great behind the scenes access! - Our guide, Mattia, did a great job! We were loaded with questions and he was very able to answer them, provide background information, and even give insights on why certain processes were done the way they were. We were amazed by the amount of work and the number of hams ‘hanging.’ A very eye opening and informative experience. On very small negative - it would have been nice to see the factory working, but we arrived during their lunch and missed the action. Dang! Nevertheless, it did not take away from a great day! Thank you, Mattia! On very small negative - it would have been nice to see the factory working, but we arrived during their lunch and missed the action. Dang! Nevertheless, it did not take away from a great day!
