Highlights
  • 7 Rue de Béarn - Making the choux pastry:
Heat water, butter, and salt in a saucepan until the butter melts. Add flour and mix well until the dough comes away from the sides. Transfer the dough to a bowl and add the eggs one at a time, mixing well between each addition.

Piping the choux pastry:
Transfer the choux pastry into a piping bag fitted with a plain tip and pipe sticks of dough onto a baking sheet lined with parchment paper.

Baking the choux pastry:
Bake the choux pastry in a preheated oven at 200°C for about 20 to 25 minutes, until golden and crispy.

Making the pastry cream:
Heat the milk in a saucepan. In a bowl, whisk egg yolks, sugar, flour, and cornstarch. Pour the hot milk over the egg mixture while stirring constantly, then pour the mixture back into the saucepan and cook over low heat until the cream thickens.

Adding the filling:
Let the éclairs cool and cut them in half. Using a piping bag, fill them with chocolate/vanillia/coffee et … pastry cream.

Making the glaze:
Melt dark chocolate and add melted butter. Mix well until smooth.

Glazing the éclairs:
Dip the top of the éclairs into the chocolate glaze.

So much fun! - This was a really neat way to experience traditional French pastries - and they were so good!! I am an experienced baker and picked up quite a few tips. There is nothing like French baking! My teenager approved as well! We had fun. You work in pairs so something to think about with the number of your party. You also get the recipes emailed to you after the class as well as a list of personal recommendations around the city from the instructors!

AMAZING. Would bake with them again :) - I got lucky and was the only one in the class that day, which means I got my own private baking lesson from the fabulous Manel. She was easy going, wise in her craft, productive, and kind.

Baked in Paris - Millie was our teacher and she was outstanding. It felt really empowering to learn some of the “secrets” of French baking. It was a fun way to spend the afternoon.

Wonderful Morning! - Delphine made sure my friends and I had a wonderful morning learning all of the techniques of a proper eclair! It was one of our favorite parts of the trip to Paris, we went as a group of girls for a bachelorette and we spent the morning laughing and sipping coffee and making delicious deserts. Would definitely recommend to a friend or anyone traveling to the city with a few hours of free time.
