Long live Mole! - Great experience with Etnofood, and our Mole adventure with Liz. It was fun to learn, collaborate, hang out with new people, and enjoy the fruits of our labor, gathered around a table outside in the courtyard as the sun went down.

Great intro to mole - It was a great experience. The first thing was a trip to the Market for fresh ingredients. Combining all the ingredients nuts veggies and pepper! cooking was fun!

Worth Attending - I enjoyed this class, it was a super small group (just me and two other people) which I think allowed for us all to get involved in the different parts of the prep cooking - it's more than just mole you make - it's everything from your starter to your agua fresco drink and sides. I ended up suffering from a bit of heat exhaustion at the beginning when we were going through the market and our chef, the owner and generally everyone on the team at Etno were amazing - they were professional (immediately they knew exactly what to do when I started to feel like I was going to pass out - the chef even bought me chocolate and extra cold water to help replenish) helpful (the owner stayed with me at the market until I felt better and was super kind and helpful, allowing me the time to replenish, feel better then rejoin the rest of the group back at the kitchen where I was given Agua Jamaica to help with my sugar levels and he also helped me get a taxi at the end of the class. Chef was lovely and kind and explained everything and all the ingredients in detail. Even though I was ill for part of it, the class was still well worth attending.

Cooking in Oaxaca - Victor was a splendid instructor and conversationalist. I never expected that we would be making not just mole, but a six course meal. I also didn't realize we were first going to the market to buy veggies! this was a treat. Victor explained a lot to us about the local herbs and veggies and we met some of the purveyors of special peppers, maiz (for tortillas), etc. Back at the kitchen, all ten of us donned aprons and started chopping the food stuffs. As we were ready to start cooking, Victor told us what to do, what we were making and the process. There were a lot of different things going on so you had to go from one thing to another or listen in on Victor's instructions. It was amazing how smoothly this all worked. It was as if we had been working with this team of people forever! Victor was ever patient and informative. I highly recommend this.

Oaxacan culture at its finest - Such a great way to immerse yourself in Oaxacan culture. Mucho gracias to Victor foe sharing his Grandma's recipes with us. The tour is fantastic and is a really fun day. My son was well looked after and had a great day too!

A kitchen family experince - My husband and I really enjoyed this total cooking experience. Victor and his staff were so welcoming. After a trip to the local market, where Victor showed us how to shop and had us sample many of the foods, we headed to the kitchen. The other class members were so interesting and congenial as well. Working together throughout the preparation and the eating and the cleanup was like being with family.

Making a Mole and More - From shopping to chopping, rinsing and mincing, frying and steaming, we had a wonderful day in Oaxaca with Victor and the team at Etnofood. A visit to a local market first to buy ingredients and to chat with Victor’s favorite merchants, and then an elaborate preparation of mole, salsa, rice, salads, and tortillas. A real nice way to spend the day in Oaxaca. Thanks to Victor.

Fabulous Experience! - Really enjoyed this experience. Etnofood was a great venue for this cooking class. We were early to the class and had fresh orange juice and warm Apple French Bread that was to die for while we waited! The market was quite small but had all the ingredients we needed. Victor was very knowledgeable and a great communicator and cook. Staff were responsive and attentive in assisting our small group of 7 participants. Everything was well timed. The dishes were delicious and we enjoyed having lunch with everyone. Especially loved making the tortillas. On reflection the only downside was that while we cut and prepared all the mole ingredients we did not actually see how it was put together and cooked. Loved the fact that Victor was able to share all the recipes with us. HIghly recommend and would participate again.

More like a food prep session without a teacher - We enjoyed an informative and enjoyable hour at the local market, sampling foods and purchasing items for the meal. My expectation was that I would leave class knowing how mole was prepared. I actually never saw it being prepared. Each student was given a different task from washing veggies to chopping them. We each prepped a different part of the meal and took turns washing dishes throughout the class. The chef knows his stuff, but is weak on teaching.

Bait and Switch - This was a classic bait and switch scam. We booked this class because it stated very clearly in two different places the maximum class size would be 4 people. Imagine my surprise when we were thrown into a class of 13. Secondly, the class was to learn how to make mole. Well maybe one person in our class made some mole. We made tlayudas, cassidias, salsas, tortillas, and one mole. Since the class was so big I never got to part of the mole experience. The people in the class were great. Fun meeting so many travelers but that was not what the class advertized. If that is what I signed up for I would have been happy as a clam basted with mole. The head chef was gracious and knew what he was doing but his time was divided by 12 other people. This was supposed to be a very small intimate experience focused on making mole. It was an experience, just not what was advertized. Shame on the promoters.
