We’ll initiate the excursion with a concise tour of Kutaisi through a visit to the Bagrati Cathedral. From there, we’ll travel to our Family Winery - Nikoladze WineHouse, a 30-minute drive from Kutaisi, to savour some wines. Here, we’ll taste 2 (or 3) white wines, a red wine, and two varieties of Chacha (local vodka): one refined, and another directly distilled from grapes.
The session shall provide insights into our winemaking technology, the wine fermentation process, and various equipment involved in crafting this holiest drink of Georgians. We’ll complement the tasting with a variety of cheeses served with traditional Georgian bread or homemade khachapuri.
‘Our journey into winemaking was initiated by our grandfather, crafting wine in an open-air winery under the capacious walnut tree. Since childhood, I was taught to master primitive tools for cleaning the qvevry, pressing grapes, and fermenting wine. As I entered my forties, I was drawn back to the roots of our wine-making heritage. Here is where I buried my first Qvevri.’
