Mario and Giorgio Gambigliani Zoccoli will warmly welcome you and introduce you to the history of the family, the farm, the ABTM D.O.P., and its production techniques. The tour continues with a visit to the Vinegar House in the Villa attic, where some secrets about the tasting and culinary use of ABTM D.O.P. will be unveiled.
You will then be ready for a rich tasting of ABTM paired with culinary delights:
• 3 maturations of Parmigiano Reggiano (18 months, 24 months, and over 30 months)
• 2 types of ricotta (cow and sheep)

Greetings from Giorgio! Welcome to our cherished family vinegar factory. Alongside my father, Mario, who serves as the President of the Consortium of Producers “Antiche Acetaie” and the President of the Association of Expert Tasters of ABTM D.O.P., we share a deep passion for ABTM, exploring every aspect from production to unveiling its secrets.
In our vinegar factory, you will find numerous barrels, including one initiated by my great-grandfather Mario in 1905, which remains in production today. We will also discuss other significant barrels for our family, such as those started by my grandfather Giorgio in the early 1950s to celebrate the birth of his children.
Driven by our immense passion for ABTM, we have decided to open our doors and invite you into this enchanting world.
