Alex resides with his spouse, Alejandra (affectionately known as Ale), in the heart of Mexico City, a stone’s throw from the Plaza de la Constitución. Alex imparts knowledge to young minds as a K3 educator at the American School Foundation, while Ale, a seasoned tour guide, takes pride in introducing visitors to the rich tapestry of Mexican culture and gastronomy. Ale’s expertise spans the nation’s historical narrative, anthropological insights, folkloric charm, and, notably, its gastronomic heritage.
Inspired by his grandfather’s tradition of grilling nopales (cactus paddles) every Sunday, Alex cultivated his culinary skills by observing his mother and honing his craft through trial and error after being influenced by food programs on television. The aromatic essences and tastes from his upbringing and familial gatherings fueled his passion for cooking, which he now imparts to his 6-year-old pupils during their routine cooking lessons.
Alex and Ale both have a deep appreciation for hosting meals for their loved ones and derive as much pleasure from preparing the food as they do from the communal act of dining. Their culinary offerings are a blend of contemporary Mexican fare and the traditional dishes of Puebla, Ale’s hometown. As you indulge in a welcome beverage, Alex and Ale will engage you in conversation about the pivotal role of cuisine in Mexican culture. Following the cooking class, you’ll sit down to a feast that encompasses 3-4 main courses, one or two types of salsa, and a sweet finale. Accompanying your meal will be drinks such as aromatic hibiscus water, and for those opting for alcohol, beer and mezcal are available. The menu might feature a fusion of classic and innovative Mexican cuisine, including picadillo tostadas, enmoladas, flautas, or an assortment of tacos, complemented by a variety of salsas like salsa verde or roja. Involve yourself in Alex and Ale’s kitchen and acquire the skills to prepare 3-4 classic Mexican food items including a self-made salsa. You may be taught how to prepare dishes like flatuas, tostadas or enmoladas, which are chicken-filled corn tortillas prepared in a mole sauce. Mole is a rich, chocolate-based sauce full of various spices, widely loved in Mexico and simple to cook - an excellent sauce to learn for your own Mexican cooking collection. Since Alex and Ale’s kitchen is a bit small, you will likely be doing most of the cooking prep in the bar area, using the kitchen for the final cooking stage. Enjoy a communal meal featuring the homemade Mexican dishes you learned to cook with this charming pair.
