Silvia, Greg and Agriturismo L’Assiolo invite you to your own personal cooking class set at a beautiful local organic olive and orange farm just outside of Matera in the Italian countryside.

First up, a quick tour of the farm so that you can really understand where the food we use in this part of the world comes from. Learn all about our ‘liquid gold’, extra virgin olive oil, and how we produce it with our very own trees. What’s more, you’ll get the chance to eat some fruit straight from a tree - just like a real Italian farmer!

Then, it’ll be straight into the kitchen where you’ll meet Silvia, the daughter of the family, who has had over 20 years of seeing her Mamma wow local and international guests with her traditional Matera, farmhouse cooking.

You’ll learn the authentic, original way to make fresh pasta, a typical pasta sauce and also two typical dishes from Matera. From secret techniques to our philosophy of simplicity, this special experience in the countryside of Southern Italy will whisk you away to a side of Italy that is truly authentic.

Nestled in the distinct and stunning natural landscapes of Basilicata, the farmhouse construction utilized conventional materials sourced locally. The farm is composed of more than 2000 olive trees and nearly 300 orange trees together with organic gardens producing a variety of fruits and vegetables such as eggplants, zucchinis, tomatoes, artichokes, chicory, lemons, cherries, pomegranates, and a whole lot more. Visitors will have the opportunity to enhance their cooking skills in the farm’s proficient kitchen.

Wonderful - The Matera cooking class was a wonderful Experience!! Greg showed us around the farm and Silvia taught us how to make a few Itslian dishes. All in all it was amazing and we can really rrcommend it!!

The PERFECT cooking experience! - If you're looking for an amazing cooking class experience - look no further. From the moment we stepped foot on Greg & Silvia's property we felt like we were part of the family! It is more than just a cooking class, where you learn about the property, the family, olive oil and the farm way of life over the generations. This cooking class and meeting Greg & Silvia was one of the highlights of our trip. Would highly recommend this beautiful experience!

Fantastic Experience! - My wife and I came here for a cooking class and tour of the grounds and it was a great experience, Silvia and Greg are very hospitable and the food we made together was delicious! If we are ever in the area again we will definitely be coming back! If we could give 10 stars we would! It was truly an unforgettable experience

10 out of 10 culinary excellence - The whole cooking class from start to finish was excellent. From the farm to the plate, everything was explained and clearly demonstrated in keeping with traditional Italian cooking. The food was a stand out and the best we had eaten in our three week stay in Italy.

Think paradise. Olive grove by a beautiful lake. Incredible hosts. Knowledgeable, kind, warm, funny. - When you think of the perfect experience in Italy…this is it. Great food, great fun and amazing hosts. A milestone experience for all 16 of us.

Best Cooking Class Ever! - I can't say enough about this cooking class and Silvia and Greg! Greg picked up in town and driven to their farm. It was an absolutely beautiful drive and even more beautiful when we got there. Greg was full of so much history and knowledge. He gave us a tour of the farm. We saw their new donkey, dogs, cats a horse. We sampled lemons off the tree with sugar. We went inside after our tour and met Silvia after the tour in the main dining room of the house. It was just me and my two daughters for the class. So special! We made cavatelli and orecchiette pasta. We then went into the main kitchen to make the sauce, fried bread balls, and bruschetta. We even got to meet Silvia's mom who was in the kitchen with some helpers preparing for Sunday lunch. After the meal was cooked we sat in the dining room and Silvia brought out at least 5 or 6 antipasto dishes and wine from a neighbor. We then had our pasta (we were already full but kept going), a version of lemoncello and cookies. We loved Silvia and Greg. They made us feel like family. I love a cooking class but this was an experience that exceeded my expectations. I wouldn't miss this one.

A Must in Matera! - An absolute must in Matera! Greg and Silvia are wonderful hosts. After Greg introduced us to the farm, including giving us slices of lemon off the tree with sugar on them (surprisingly good!), we met Silvia and learned how to make fresh pasta. We then went into the kitchen and prepared delicious bruschetta, a vegetable sauce for the pasta, and fried cheese “meatballs.” We learned about the culture and how it impacted cooking in this area. We then had a feast for lunch, including additional local fresh foods from the farm and made by the family. Hands down one of the highlights of our trip - highly recommend it!

Amazing!!! - All I can say is WOW!!! My mum and I have been searching for an authentic cooking class in South Italy and came across this one in Matera. Both Greg and Silvia were amazing hosts. We got picked up from the city centre and were driven to their beautiful home not too far from the main centre. We had a detailed walk through the family owned farm and then began making fresh pasta. We made 2 different types of pasta whilst indulging in a glass of red wine. We then cooked the pasta sauce which was absolutely beautiful (best pasta we have had in Italy yet). The hosts went above and beyond and I couldn’t recommend a better experience… 5 stars!!!

You must do this!! - The cooking lesson and tour of the agritourismo Will stand as one the most memorable experiences we’ve had the pleasure to participate in and will definitely be hard to beat. My boyfriend and I were staying in Matera and our host recommended Silvia’s cooking class. We both love to cook and what better way to learn Italian food than from the source. We had a wonderful and informational tour by Greg who taught us all about olives and how they produce the olive oil at the farm. We even got to pick and eat a lemon right from a tree. Then we had a detailed cooking lesson with Silvia. She taught us all about the history of the food in southern Italy and everything down to the composition of the flour. We then proceeded to make our own pasta dough and shape them ourselves. We made a traditional sauce from locally sourced food and learned the essentials to Italian cuisine. We then sat down and Silvia brought us fresh olives from the farm as well as some other homemade Italian delicacies. We ate our pasta and drank wine and enjoyed relaxing after a very informative day. We headed back to matera feeling extremely satisfied; our bellies were full and our minds had been opened. What we learned at will be something we carry with us for the rest of our lives. Silvia and Greg were unbelievable hosts, so kind, knowledgeable, and spoke English (which was very helpful for us). If we ever return to southern Italy we will definitely stay at their agritourismo. We highly recommend this class for a true look into southern Italian cuisine, history, and culture.
