I’m Fausto Borella, Italian Academy Sommelier of Extra virgin olive oil Founder. I role Maestrod’olio Academy in Lucca, in the heart of Tuscany. We are specialized in organizing private tastings and incentive events.
In the historical site of the Academy, an XVIII-century apartment, we can admire a stunning view: from the medieval city walls to Lucca’s VIII-century cathedral bell tower or the historic Theatre of the town. In our Academy, we propose our guests the best local products. We usually introduce the world of Evo, cultivars, health benefits and then we move on to make an extra virgin olive oil tasting of 4 Evos.
Extra virgin olive oil tasting is followed by wine tasting and a light lunch to appreciate traditional Tuscan cooking.
All the activities are held personally by me, Evo expert and food & wine consultant, in English, French, and Spanish.

Additional Information
Nested within an 18th-century dwelling at the historic Academy site, we offer our patrons a thorough sampling of the finest local produce. Typically, we enlighten visitors about Evo, its varieties, health merits, and eventually conduct an exclusive tasting of 4 to 6 different Evos of extra virgin olive oil. Following the oil tasting, we proceed with wine sampling and top it off with a light meal, be it lunch or dinner, showcasing the quintessential Tuscan cuisine. I personally supervise all activities, leveraging my expertise as an Evo connoisseur and a food & wine consultant, and I offer instructions in English, French, and Spanish.

Perfecto! - The lessons on olive oil in Italy were most informative. Host ms were fabulous, wine and lunch delicious. Highly recommend.
