Participants will discover the art of crafting a Japanese knife, learn sharpening techniques, observe a knife-cutting demonstration, practice their knife skills, and join a cooking class to prepare sashimi zuke-don for lunch.
The journey begins with an in-depth explanation of the craftsmanship behind Japanese knives, along with insights into their cultural significance. Participants will then watch an instructor demonstrate expert knife techniques and have the opportunity to use a Japanese knife to slice sashimi. This hands-on experience will reveal the knife’s sharpness and proper usage for cutting sashimi.
Once participants have refined their knife skills, they will engage in a cooking class to master the preparation of zuke-don, a rice bowl topped with marinated sashimi (typically tuna, though the fish may vary based on availability).
While the tuna marinates, participants will learn to sharpen a Japanese knife using a whetstone, with guidance from the instructor, ensuring even beginners can succeed.
At the conclusion of the class, participants will savor a delectable tuna bowl and miso soup. Additionally, they can enjoy a tasting of our unique sake.
