Visiting the Frantoio Rosso Ipogeo offers a journey through history: from the era when Puglia was beneath the sea to the recent past century of olive oil production. The tour begins with viewing marine fossils set in limestone rock and progresses through the late medieval period when lampante oil was produced and exported to Europe. It covers the production stages and equipment used during that time, concluding with the mill’s final phase, when the production shifted from lamp oil to edible oil.
