- 35 Rue de la Fusterie - Visitors are greeted with a brief tour of the beautifully restored 17th-century workshop, followed by introductions and a class overview. The journey begins with the tale of the canelé—its origins and its unique role in Bordeaux’s culinary tradition.
Participants then prepare the canelé batter and fill traditional copper molds for baking. While the pastries bake to a caramelized perfection, the chef introduces another French classic: the madeleine—a versatile dough with numerous variations and uses. A distinctive flavor or seasonally inspired preparation is chosen for the madeleines, which are then placed in the oven.
Throughout the session, the chef offers practical advice on mold selection, optimal baking temperatures, and suggestions for pairing and serving these delightful cakes at home.
The experience concludes with a tasting of both pastries, accompanied by a glass of local wine or a warm beverage, creating a delicious and memorable moment.

Nestled in a beautifully restored 17th-century venue in the heart of Bordeaux, this workshop provides a unique opportunity to create the city’s iconic pastry—the canelé—from scratch. While canelés are available throughout the city, including at the renowned Baillardran and the beloved La Toque Cuivrée, few places offer the chance to make them yourself using traditional copper molds. Conducted entirely in English by native speakers who are also locals, this class combines hands-on techniques with cultural insights into Bordeaux’s rich culinary heritage.
This warm, immersive setting allows guests to engage with local traditions, ask questions freely, and enjoy the fruits of their labor. The experience extends beyond baking, offering not only a taste of Bordeaux but also an insider’s perspective on French culture—all within a space designed for comfort, creativity, and connection. Perfect for both food enthusiasts and curious travelers.
- We have tried to make our space as accessible as possible, that being said, the surrounding streets date to the 17th and 18th century and may be difficult to navigate for some. We are on the ground level without stairs but there are slight door frame transitions to negotiate and our primary work area is a standing counter height with tall stools. We do have an accessible toilet and sink. We will do our best to work with you to create a wheelchair accessible workspace, if needed but please alert us in advance of your visit so we may prepare.
