The Fez cooking class begins with a trip to the local market where we source all necessary ingredients including vegetables, meat, fish, fruits, poultry, and Moroccan spices such as ginger, black pepper, white pepper, cumin, cinnamon, paprika, saffron, turmeric, nutmeg, fenugreek, coriander, thyme, and garlic. Following the shopping, we proceed to the traditional Moroccan kitchen where experienced local chefs will introduce you to the dishes that you’ll be preparing. Notable dishes in Moroccan cuisine include Couscous, Tagine and a variety of salads like Zaalouk, which is a bit spicy but captivatingly flavorful.
