- Acetaia Marchi srl - Located at the entrance to the city of Modena, Acetaia Marchi is a family-operated enterprise dedicated to crafting Balsamic Vinegar. The Marchi family’s ancestors began storing barrels of this “Black Gold” in their attic in 1910, recognizing its immense value even then.
In their vineyards, only indigenous grape varieties are cultivated, deeply embedded in the traditions of the Modena and Reggio Emilia regions. The estate is surrounded by rows of both white and red grapes. These grapes are harvested, gently pressed, and the resulting must is cooked in open-air boilers.
The tour proceeds by taking visitors through one of the aging rooms for Balsamic Vinegar of Modena IGP. The most renowned Balsamic Vinegars are crafted from two ingredients: cooked must and wine vinegar, which are expertly combined and aged in wooden barrels. Balsamic Vinegars must mature for a minimum of 12 or even 25 years.
