Roselle hibiscus, known as zobo in Nigeria and sobolo in Ghana, is a plant most likely native to Africa. Its ruby red sepals create a tangy, refreshing drink with medicinal benefits, such as helping to lower blood pressure. In this class, participants work with hibiscus syrup to craft a bubbly cocktail with prosecco. The syrup can also be used for hot tea or a refreshing cool drink.
Jollof rice, the red-orange rice dish that sparked the internet trend known as the Jollof Wars between Ghana and Nigeria, is a delightful meal built on a rich onion, tomato, and chilli sauce in which the rice is cooked. As the spices and ingredients blend together beautifully, guests discover how international ingredients contributed to West Africa’s own melting pot.
The class then moves on to the operator’s mother’s barbecue chicken. As the layers of flavour from onions, garlic, and vinegar come together, participants take a dive into one of West Africa’s famous chicken preparations, similar to poulet yassa.
