Lunch was a feast for the senses. We dined on a local family’s islet, where the spread included the famous “Elephant Ear fish,” fried to crispy perfection. The flavors were bold and unique, a testament to the rich culinary heritage of the region. As we ate, Loi shared stories of how the locals had navigated the challenges of the COVID-19 pandemic, showcasing their resilience and adaptability.

The day concluded with a leisurely boat ride back to My Tho, coconuts in hand to quench our thirst. As the sun began to set, casting a golden glow over the river, I reflected on the day’s experiences. The Mekong Delta had offered me a window into a world that was both foreign and familiar, a reminder of the beauty and strength of the human spirit.
