We will go to the Ruzafa market together and we will make the purchase of the fresh products necessary to cook a good paella. While we are making the purchase we will tell you the origin of the paella and customs and culture of the Valencian people.
Later we will walk for 8 minutes to reach the kitchen where we will hold a sangria workshop. The chef will be waiting us with some delicious tapas accompanied by sangria, beer, water… Then our chef will explain step by step the preparation of a vegetable paella and once finished we will sit down to taste it. We will accompany the paella with a Valencian tomato salad, Valencia wines, seasonal fruit, typical Valencian sponge cake, sweet wine and coffee.

Valencian paella is celebrated in this interactive cooking class, where participants learn the genuine recipe, not a lackluster imitation. Discover how to prepare authentic paella using seasonal ingredients sourced from Valencia’s fields, crafted the way local chefs have honed it over generations. It’s 100% Valencian, with no shortcuts—just genuine techniques from Valencian chefs who have been making it since childhood.
The experience begins at Ruzafa Market, a local favorite where residents purchase fresh ingredients, away from the hustle of Central Market. Participants then join a small-group workshop to uncover the secrets: choosing the finest seasonal vegetables and meat or seafood, achieving the perfect socarrat (the cherished crispy rice crust), using Albufera rice from Valencia’s fields, and expertly balancing saffron.
While the paella cooks, enjoy a sangria-making workshop and taste traditional tapas. Finally, savor the meal with local wine, salad, mistela, and a homemade dessert.
