Later we will walk for 8 minutes to reach the kitchen where we will hold a sangria workshop. The chef will be waiting us with some delicious tapas accompanied by sangria, beer, water … Then our chef will explain step by step the preparation of a seafood paella and once finished we will sit down to taste it. Valencia’s seafood paella is a coastal treasure, and this interactive cooking class reveals the authentic recipe, steering clear of the touristy versions. Participants will learn to craft genuine seafood paella, complete with the traditional salmorreta sofrito, as perfected by Valencian chefs over generations. Fresh seafood is used, with no shortcuts, ensuring an authentic culinary experience guided by local chefs who have been making it since childhood.
The journey begins at Ruzafa Market, a beloved local spot for fresh ingredients, away from the bustling Central Market. Participants will then join a small-group workshop to uncover the secrets: creating the rich salmorreta base, achieving the perfect socarrat (the coveted crispy rice crust), utilizing albufera rice from Valencia’s fields, and expertly balancing saffron.
As the paella cooks, enjoy a sangria-making session and taste traditional tapas. Finally, savor the homemade paella alongside local wine, salad, mistela, and a homemade dessert.
