The host is a Traditional Oaxacan Cooking instructor and a 1st Place winner at the Meeting of Traditional Cooks of Oaxaca.
The experience begins with a tour of Oaxaca’s largest market, where participants will discover endemic and local foods and products, and purchase fresh, authentic ingredients.
Participants will learn to prepare Mole Negro or Mole Coloradito, Green, Yellow, and/or Nixtamal for tortillas, memelitas, and empanadas, along with Molcajete Sauces and other authentic Oaxacan dishes. (Please inquire about the available menu for your reservation date, as there are seasonal, vegetarian, and vegan options.)
During the cooking class, local fruit drinks, quesillo, and grasshoppers will be enjoyed while preparing the chosen dish.
At the conclusion of the class, participants will savor their dish with a delightful Mezcal and can take the prepared products home.
