The journey takes you away from the bustling streets into quieter local neighborhoods, far from the usual tourist paths, where a roadside table under an awning is staffed by friendly ladies. First, enjoy banh can – soft and fluffy rice flour mini pancakes, cooked in small terracotta pans and topped with a quail egg or served with minced pork ball, squid, or shrimp.
These little domes are incredibly addictive, a delightful sponge for the array of flavors and textures after being dipped in a bowl of nuoc mam pha, the aromatic fish sauce made from fermented anchovies, mixed with your choice of fried spring onion.
Next, there’s banh xeo, a crisp pancake made from rice flour, golden with turmeric powder, filled with bean sprouts, scallions, and local squid. Wrap them in your choice of greens and dip them in the same sauce you prepared earlier.
Following that are fresh rice paper rolls, with various herbs and pickled carrot, white radish, and BBQ minced pork wrapped around a bamboo stick.
Place all of this on a soft rice paper, roll it up, dip into a special sauce made from sticky rice, minced pork, fish sauce, and enjoy.
Another must-try dish in Nha Trang is Bun Ca (noodle soup with tuna). This dish combines onion, tomato, and tuna to create a delicious broth served with various sliced herbs, seasoned to offer four different flavors: sweet, sour, salty, and spicy.
The highlight of the street food tour is a dessert called Che Chuoi Nuong, which is a banana wrapped in sticky rice and banana leaf, then grilled over a low charcoal fire until crispy. It is served on a plate topped with sweet coconut milk and sprinkled with ground peanuts.
