Accompanying it is sizzling banh chao - golden, lacy crepes that earn their name from the sound of batter hitting a hot iron pan. We won’t reveal all the surprises, but there are over 15 tastings in total, so come with an appetite.
Visit the workshop of Ry Sanren, who keeps alive a fading craft, hand-pressing each noodle strand with four decades of expertise. The result is a bowl of num banhchok, Khmer noodles with a flavor depth that no factory shortcut can replicate.
- Siem Reap - Our tuk-tuk takes a picturesque countryside journey to the base of the ancient Phnom Krom, a sacred site chosen by King Yasovarman over a thousand years ago. As the sunset casts its glow over endless lotus fields, enjoy grilled snakehead fish with a sweet and sour glaze, and the staple of Cambodian cuisine, prahok fish paste served with an abundance of foraged greens and wild aromatics.
Later, meet a culinary expert known for her legendary broth, simmering for five hours daily. We savor bone marrow like ancient hunters, followed by a revitalizing beef noodle soup. Then, visit a local favorite renowned for mastering wok hei, the “breath of the wok,” with smoky, charred circle chive cakes and a house-made signature sauce, a closely guarded recipe since 1991.
- Siem Reap - As the night cools, we visit a women-led kitchen for marinated beef skewers, coated in a complex kroeung paste and grilled over charcoal. It’s served with a nod to the French protectorate: a crisp baguette and pickled green papaya.
End with a refreshing lotus seed dessert, harvested when the Mekong’s floodwaters recede, and the wetlands burst with the petals that the Khmer carved into the walls of Angkor Wat.
