Enter a secluded, rarely accessible part of the brewery to explore Chōgō—the post-fermentation blending process—a hidden layer of artistry in sake creation that few have the opportunity to witness.
Start with an English-guided lecture by a brewery guide (WSET Level 3 Certified), explaining how sake is made and how craftsmanship influences flavor. Sample five expertly chosen sakes: the flagship Jozen Mizuno Gotoshi, celebrated for its elegant balance and crisp purity, along with four others showcasing key flavor profiles—dryness, sweetness, richness, and acidity.
Next, create your own blend to suit your taste. Curated recipes by the master brewer are available for guidance, tailored to various moods, occasions, and preferences.
