- Rodello - The experience begins with a welcome drink before guests get hands-on with fresh pasta. The dough is prepared using traditional techniques, with guidance on achieving the right consistency before moving on to different pasta shapes.
While the dough rests, two classic Langhe recipes are prepared: salsa tonnata, the creamy sauce traditionally served with vitello tonnato, and zabaglione, a rich dessert cream made with egg yolks, sugar and wine.
Guests then learn how to shape tajarin, the delicate fine-cut egg pasta typical of the Langhe, as well as ravioli del plin, the region’s iconic small stuffed pasta. Along the way, other traditional filled-pasta shapes are explored, with practical tips and techniques shared by the host.
Once the preparation is complete, guests sit down to enjoy the meal they have helped create. The traditional Langhe menu includes vitello tonnato as an antipasto, followed by ravioli del plin served with butter and sage. For dessert, a traditional Langhe hazelnut cake is enjoyed, topped with the freshly prepared zabaglione.
The meal is accompanied by local wine and water, offering the chance to savour the flavours of the Langhe from preparation to table.
