- Tatsuno City Shoyu no Sato Taisho Roman-kan - “This modern Western-style building retains the charm of the Taisho Roman era and serves as an important historical landmark showcasing the development of Tatsuno’s soy sauce industry. It is registered as a National Tangible Cultural Property, along with the former brewing factory (built in 1915) on the same premises.”
- 井戸糀店 - Ido Koji-ten is a specialty shop dedicated to koji (malted rice), crafted with traditional methods unchanged since its founding. They produce and sell not only koji itself but also homemade original miso, yuzu miso, and amazake, along with other koji-based food products.
- 发酵 LabCoo - Tatsuno is a town where 400-year-old soy sauce breweries still thrive, and its unique fermentation culture continues to flourish. This class offers a complete experience: learning about, tasting, and creating with this local fermentation culture.
Create your own MY Soy Sauce by adding your favorite natural dashi or spices to freshly pressed raw soy sauce. This experience, which includes an explanation of soy sauce ingredients and how it’s made, as well as a soy sauce tasting comparison, is enjoyable for both children and adults. The tour begins with a guided exploration of Himeji Castle, where the guide will provide engaging commentary. Following this, visitors can partake in a traditional tea ceremony at the nearby Koko-en Garden if they wish. Lunch will be enjoyed at a chosen restaurant, with options including sushi, Japanese cuisine, or tsukemen.
In the afternoon, the tour proceeds to Tatsuno City, often referred to as “Little Kyoto,” where participants will explore the historic castle town and engage in various activities tailored to their interests. All activities will be chosen and customized through prior email communication.
