• Hoi An - While most tourists only glimpse Hoi An’s food traditions, our tour with over 15 tastings delves into the culinary depths of the Ancient Town and the local village of Tra Que.

The morning begins amidst the lively market, seeking out the culinary stars once praised by Anthony Bourdain - savoring chewy bánh bot loc dumplings in a rich broth. We then visit Mr. Ly’s stall, where he has been crafting Vietnamese “wedding dumplings” since the early hours, wrapped delicately in green banana leaves.

From aromatic clam salad to steaming wonton soup, we explore the dishes that have nourished locals for generations. Sample the original Hoi An cao lâu noodles, whose ingredients were shaped by history, arriving here with the ambitions of Chinese and Japanese traders.

• Hoi An - Beyond the bridges, we venture to the nearby village of Tra Que, a 400-year-old community thriving with fresh herb and vegetable gardens. We have an exclusive invitation to an organic farm for a hands-on masterclass in the traditional art of rice-paper making. Our hosts will prepare a farm-to-table feast featuring sizzling bánh xèo pancakes and crispy watercress-prawn salads, among other surprises.
• Hoi An - Back in town, witness the masters crafting the “White Rose”—delicate, flower-shaped dumplings that pay homage to a bygone era. This recipe has been a family secret for over a century; even today, generational chefs journey to the 1,000-year-old Bà Lê well to collect the specific water needed for the dough.
