- Veikou 93 - Experience the inviting and carefully curated ambiance of CHNOPS, where you’ll embark on a storytelling adventure through one of Greece’s most misunderstood wines: Retsina. Once regarded as inexpensive and low-quality, retsina was often overlooked, yet its origins trace back to ancient times when wine was preserved with pine resin. Today, a new wave of winemakers is transforming it with skill, attention, and innovation. You’ll savor five unique retsinas, each paired with a thoughtfully selected dish that enhances its distinct character. All dishes are prepared with local, seasonal ingredients, linking each taste to the vibrant landscape and evolving identity of Greek wine. Your journey begins with Retsina Afros-Kechris Winery (Thessaloniki), paired with pan-fried cheese. It continues with Botanic Sparkling Retsina (Attica), served with white tarama mousse and a homemade tortilla. Next is Retsina Amphorε Nature (Aigialeia), accompanied by house-marinated anchovies. Pitys Ritinitis (Mantineia) follows, paired with yellow split pea purée topped with smoked mackerel. The experience concludes with Retsina-Aoton (Attica), alongside handcrafted meatballs with toasted pine nuts.
