From Waves to Whisky: A Surfer’s Journey to Edinburgh’s Tallest Distillery
When the waves of Central America are out of reach, a new adventure awaits in Edinburgh. Join me as I explore the UK’s tallest distillery, where tradition meets innovation in the heart of Scotland’s whisky district.
A New Adventure in Edinburgh
As a professional surfer, my life is usually spent chasing waves and soaking up the sun in Central America. But every now and then, I find myself drawn to new adventures that take me far from the ocean’s embrace. This time, it was the allure of the UK’s tallest distillery that called me to Edinburgh. My wife and I, always eager for a new experience, decided to explore the Port of Leith Distillery, a remarkable new landmark in the historic whisky district of Leith.
The journey began with a tram ride down to the Leith district, a vibrant and eclectic part of the city. The port and dock area were fascinating, with a unique blend of history and modernity. As we approached the distillery, the building’s architecture immediately caught our attention. It’s the UK’s first vertical distillery, and its design is nothing short of spectacular. The views out onto the Firth of Forth were breathtaking, a reminder of the ocean’s distant call.
Discovering the Art of Whisky Making
The tour of the distillery was an eye-opener. As someone who spends most of his time analyzing wave conditions and beach reviews, diving into the world of whisky production was a refreshing change. The equipment was state-of-the-art, and the decor and furnishings added a touch of elegance to the experience.
Our guide was incredibly knowledgeable, breaking down the complex process of whisky-making into digestible pieces. Even for someone like me, who usually focuses on the perfect surf break, the intricacies of whisky production were fascinating. We learned about the company’s unlikely inception and the passion that drove two whisky fans from Edinburgh to create this unique distillery.
Tasting the Spirit of Scotland
The highlight of the tour was undoubtedly the tasting session. We took a seat in the QC LAB, where we were guided through a tasting of New Make spirits, port, sherry, and Table Whisky. Each sip was a journey through the production and maturation process, a sensory experience that left a lasting impression.
Filling our own miniature bottle of New Make spirit was a delightful touch, a keepsake to remind us of this unique adventure. As we savored the flavors, I couldn’t help but think of the parallels between whisky-making and surfing. Both require patience, skill, and a deep connection to nature.
As we left the distillery, the sun was setting over the Firth of Forth, casting a golden glow over the water. It was a fitting end to a day that had taken us on a journey far from the waves but no less thrilling. The Port of Leith Distillery is a must-visit for anyone in Edinburgh, a place where tradition and innovation come together to create something truly special. I can’t wait to return, perhaps on another adventure that takes me away from the surf and into the heart of Scotland’s whisky heritage.
