- Via dei Renai, 37 - Step into a hillside home just outside Florence for a private, hands-on Italian cooking experience hosted by a local couple. Guests learn to cook and then sit down together to enjoy the meal they prepared, paired with local wine.
A pickup from a central Florence location begins the 2-hour cooking class. Guests learn to make pasta from scratch along with a seasonal sauce—either a fresh vegetable blend or a Sicilian-style sauce. Next, a local dish is prepared, such as pork fillet with almonds or Fabio’s favorite, a pan-stewed cod with leeks and purple cabbage. The experience finishes with a seasonal dessert.
For those who choose the optional visit to a local farm and neighborhood food shop, a short 15-minute stop at a Tuscan farm allows guests to walk through the fields and learn about what is currently growing in the region. At the farmstand, fresh seasonal vegetables are purchased for cooking. Next, a stop at a nearby local supermarket and specialty food shop shows where Tuscan residents buy their ingredients, with Fabio demonstrating how to select the best cheese, fresh meat, or fish. Depending on the menu and guest preferences, the visit may include the farm, the neighborhood market, or both.

Fabio lives on a hill in the countryside surrounded by olive trees. Fabio and Christiane (when she is home) welcome you into their colorful home with a refreshing drink. Fabio will explain how they pick olives and how olive oil is made. Next, join Fabio in his kitchen for a 2.5 hour hands-on cooking class. Learn to make fresh pasta, sauce, a main and dessert. Depending on the season, you might help Fabio make tagliatelle con ragù or squid risotto with wild fennel and orange peel, and cod with leeks and purple cabbage or pork chop with almonds. For dessert, enjoy castagnaccio, chestnut flour cake, a regional favorite or panna cotta with strawberry coulis in the summer over a pot of freshly brewed coffee.
