This was followed by a rich tomato and basil soup, and the main course featured a succulent supreme of chicken in a Veronique sauce, served with creamed potatoes and roasted root vegetables. For dessert, we indulged in a ‘Rastin’ apple and cinnamon crunch, a perfect ending to the meal.

Una and her team went above and beyond to ensure that every guest, regardless of age or mobility, had a wonderful time. I was particularly impressed by their thoughtful assistance to an elderly gentleman in our group, who was provided with a comfortable seat and easy access to the facilities. This level of hospitality is rare and speaks volumes about the dedication of the team at Knappogue Castle.

The evening was a perfect blend of history, culture, and entertainment, offering a glimpse into the past while creating lasting memories for the present. It was a reminder of why I fell in love with European history and travel writing in the first place.
