A Warm Welcome to Island Organics

As I stepped onto the lush grounds of Island Organics in the north of Samui, I was immediately enveloped by a sense of warmth and hospitality. The rain was gently pattering on the roof of the sheltered cooking area, but it only added to the cozy atmosphere. Let and Cam, the passionate owners of this organic micro-farm, greeted us with open arms and shared the inspiring story of how they turned their dreams into reality. Their enthusiasm was infectious, and I felt a deep connection to their journey, reminiscent of the many small-town stories I’ve encountered on my road trips across America.

Let’s introduction to the farm was a fascinating dive into the world of aquaponics and worming systems. It was a reminder of the innovative spirit that thrives in small communities, where people work tirelessly to create something meaningful. As I listened to Let speak, I couldn’t help but think of the countless farmers and artisans I’ve met along the highways of the Midwest, each with their own unique tale of perseverance and passion.

The Art of Thai Cooking

The cooking class itself was a delightful exploration of authentic Thai cuisine. Under the expert guidance of Let, we learned to prepare four traditional Thai dishes, each bursting with flavor and freshness. The highlight for me was crafting the fresh curry paste, a process that was both meditative and invigorating.
